Gratitude, Day 76: I am grateful for homecooked meals

Homecooked meals are the best. I’ve never been hugely into cooking, but recently I’ve really got into making my own food.

Life doesn’t suck…
because of homecooked meals

It’s amazing being able to make food that you like at home. It’s all good and well having a favourite meal that you go out for or get as takeaways, but when you can make something yourself, you can have it whenever you want.

I started off easy with my cooking. Mince. I started with spaghetti bolognese. Onions, mince and a can of bolognese sauce over pasta. Tonight’s dinner was Mexican/Italian mince with lettuce salad and fresh guacamole over corn chips.

My mince has gone from being served with onions and sauce to having a full accompaniment of vegetables and spices. Tonight there was a brown onion, a clove of garlic, two carrots, two capsicums, two dessert spoons of my favourite Mexican paste, half a jar of tomato passata and seasoned with my favourite salt mix and pepper.

The guacamole was two fresh avocados, a red onion, a clove of garlic, two small capsicums, a tomato and seasoned yet again with man-grind and pepper.

This all resulted in a meal that I would happily eat over and over again. Lots of flavour, lots of yummy fresh vegetables and nothing in it was particularly bad for you.

I’m really grateful to be able to cook my own homecooked meals. Grateful to be able to feed my family. Grateful to know how to put a decent meal on the table. It’s amazing being able to put a meal together and evolve that meal over time. This lets me turn it into something better and better.
